Created in the early 1980's from old Limerick recipes by Marion Cahill, this unique brand of cheddar is full-flavored and tangy yet ever so slightly pungent with a firm texture. It is made from pasteurized cow's milk and is considered a "vegetarian" cheese since its curds and whey are separated with vegetable rennet. This form of cheddar takes cheese to new heights with the added Irish ale porter laced through the cheddar. Pair with a tall pint of Guiness and plain water crackers. Note: Remove the brown wax rind before eating.
